HONEY ROASTED CHICKEN
Yield: 4 servings

The tamarind from the SAMAI amazon spicy sauce combines the honey, mustard, and saffron to impart a sweetly aromatic and subtle flavour to
the chicken.  Altough this dish works well when baked in the oven, the smoke from charcoal grilling adds another dimension to its flavour.

Ingredients:  

1 1/2 tbs / 700 g
1/2 tbs / 7.5 ml

Skinned chicken breasts (4)
Vegetable oil
Pinch of saffron

Marinade:

1/2 cup / 125 ml
1 tbs / 15 ml
1 tbs / 15 ml
1/2 tsp / 1.5 g

Honey
SAMAI ANDEAN DELIGHT amazon spicy sauce
Spicy brown, German style or Dijon mustard (avoid that horrid yellow type!)
Tumeric

Grease a baking dish with the vegetable oil.

Mix the marinade ingredients toegether, then spread a little less than half over the bottom of the baking dish.  Place the chicken breasts on top of the marinade, then cover with the remaining marinade.  Sprinkle a pinch of saffron on top pf each chiken breast.  Cover with lid or plastic film and let stand at room temperature for 1 hour.  Refrigerate overnight.

Remove the chicken from the refrigerator 1 hou before cooking.  Add 1/2 tbs (15-30 ml) of water to the baking dish, cover with lid or aluminium foil, and bake chicken at 250 C for 30 minutes or until done.

Alternatively, the chicken can be barbecued, basting with the remaining marinade.
