DRAGON WINGS
Yield: 4 servings

A delightfully spicy and oriental alternative to Buffalo wings.  Turn your guests into fire-breathing dragons by adding extra chillis to the recipe.

Ingredients:

8
1 tbs / 15 ml

Chicken wings
Vegetable oil

Marinade:

1 bottle / 147 ml
2 tsp / 30 ml
1/4 cup / 35 g
1 tsp / 3 g

SAMAI QUECHUA MAGIC amazon spicy sauce
dry vermouth or sherry
Sliced spring onions (scallions), including green part
Ginger, cut into slivers about 1/2 inch (1 cm) long

Place chiken wings into a glass or ceramic dish. Mix marinade ingredients toegether, then pour over wings. Cover with lid or plastic film and let stand at room temperature for 1 hour, turning the wings in the marinade about every 15 minutes. Refrigerate overnight.

Remove from refrigerator about 1 hour before cooking.

Transfer wings to a lightly oiled baking dish, and spoon remaining marinade over them.  Bake at 250 C until done.  Baste frecuently with the liquid in the baking dish so that wings acquire a syrupy glaze.

WELSH RAREBIT: CREAMY TOASTED SANDWICHES
Yield: 2 servings

One of the most useful kitchen inventions of the late 1900's has been the sandwich toaster, and the variety of sandwiches and appetizers it can be used to prepare ranges from the mundane grilled cheese sandwich to Chinese shrimp puffs..

Left-over crab spread or smoked oyster roll go lusciously creamy when used as fillings for toasted sandwiches.   To enhance the flavours, sprinkle some crispy fried onions on top of oyster roll fillings, and chopped chives and dill on top of the crab spread before grilling.

4 slices slices
8 tbs

White bread
Crab spread or oyster roll
Butter or margarine

Mix together the grated cheese, egg, mustard, Worcestershire sauce and SAMAI ANDEAN DELIGHT, then spread on the toast.  Sprinkle with paprika.

Place the toast under the broiler/grill or put into a toaster oven until the topping is bubbly and starts to brown.  Serve immediately.

CRAB SPREAD
Serves: 8

A delightful seafood topping for canapés.  Serve on crackers, melba toast, or toast or pumpernickel triangles.  If there happens to be any crab spread left, make some lusciously creamy toasted sandwiches.

Ingresients:


4 oz / 150 g
4 tsp / 20 ml
1 tbs / 8 g
1 tsp / 1 g
1/4 tsp / 1.5 g
4 drops
2 drops


Crab meat, cooked, drained and flaked
SAMAI GINGER ZINGER amazon spicy sauce
Finely chopped spring onion (scallion)
Chopped dill
Salt
Red food coloring
Yellow food coloring
Dill leaves for garnish
Paprika for garnish

Place the ingredients in a bowl and mix well.  Chill for 1 hour before serving.  Spread onto bread or crackers. Garnish with a dill leaf and a dusting of paprika.

Note:  Use just enough food colouring to achieve an appetising rosy hue.
